A Wine to Guard

Cassini 2012 Chardonnay Reserve – This Chardonnay is rich in aroma of apple, peach and tropical notes wrapped in subtle layers of vanilla, spice and tobacco. The wine leaves long lingering flavors with perfect balance of oak, green apples and vanilla. Pairs well any seafood dishes, chicken, turkey, white cream sauced pasta, strong and mild cheese, appetizers. Grapes are whole cluster pressed to gently release the virgin and high quality juice. The juice is then fermented in stainless steel tank to continue the delicate preservation of fruit. The wine is then aged in new French and American barrels for 10 months. Six different types of barrels were used for this Chardonnay. The wine is enjoyable now and will continue to improve with careful cellaring for 3 to 5 years.

According to Cassini Cellars, the growing season was perfect for these grapes, with warm temperatures and long hours of sunlight required for further fruit and flavor development. The vines are 21 years old (two different clones) and the vineyard is on the Golden Mile Bench.
